Take cream, or almond milk, add to it eggs, sugar, saffron, and salt. Beat it well. Put it in a crust 2 inches deep, bake it well and serve it forth.
Lay the crust in a metal pie tin. Crimp the edge, prick the bottom with a fork, and blind bake the crust ~15 minutes at 375ºF until lightly golden. Remove and reduce the oven to 350ºF.
- 1 pie crust
- 2 cups light cream
- 1/3 C sugar
- 1/4 tsp salt
- 1/2 tsp saffron threads
- 6 eggs (or 8 egg yolks)
Grind the saffron with a spoonful of the sugar. Beat all of the filling ingredients together, pour into the crust and bake at 350F for 30-40 minutes or until just jiggly in the center. Chill and serve. Feel free to add some sultanas or raisins as a variation if you like.
